Many hors d'oeuvres are rich in fat or are combined with an oil or butter base, in part to buffer the impact of alcohol. If, during preprandial* drinking, the appetizer intake is too extensive, true enjoyment of the meal will be destroyed. Before a rich dinner, two or three hors d'oeuvres are usually plenty -- a bowl of nuts or olives, crudités witha dip, perhaps a canapé. For a cocktail party without dinner to follow, offer five to six different appetizers, including at least two that involve meat or seafood and at least two that are hot. Allow six to eight pieces per person if a meal is to follow. If appetizers are the only food, allow for double that amount.
